Today’s lead story highlighted an egg-based coating that extends the shelf life of fruits and vegetables.
“Even just a 15% decrease in food waste could mean feeding 25 million people,” Rice University research Maksud Rahman told Tech Briefs this week. “Coatings are instrumental to reducing this waste via longer preservation.”
